Geometria Ασύρτικο
Medium lemon color with an aromatic profile of citrus and tropical fruits. Aromas of lemon, citron, pineapple, and mango are combined with white-fleshed peach, herbal notes of lemongrass and chamomile, and a distinct minerality. On the palate, it is dry, with refreshing acidity, full body, high intensity, and a long finish.
Shaped by precise site measurements, the balance of nature, and the careful observation of every detail, GEOMETRIA Assyrtiko comes to life. This single-vineyard wine originates from a single, contiguous vineyard plot adjacent to the winery, at an altitude of approximately 300 meters, with clay-limestone soils. The vineyard is planted at a density of 400 vines per stremma, with an average yield of 1,000 kg per stremma.
Harvest takes place in late August, followed by controlled alcoholic fermentation at low temperatures of 14–16°C. The wine then remains in contact with its fine lees for approximately two months with regular stirring, a process that contributes to its crisp character.
